Curry chicken (Jamaican Style)
Boneless chicken marinated in a soy sauce, garlic, thyme and other herbs. Sauteed until golden brown and simmered in a tasty Jamaican curry sauce. Served over a bed of Basmati rice.

Bajan Chicken (Barbados)
Chicken breast seasoned in a mild jerk marinade and dried spices. Browned first then smothered in an aromatic brown sauce. Served with crusted sweet potatoes.


Caribbean Style Cornish Hen (St Vincent)
1/2 Cornish hen seasoned with Breadfruit Tree spices, then baked slowly till tender. Served with a vegetarian Peleau rice.

Jerk Chicken (Jamaica)
Chicken seasoned in a hot / mild jerk marinade. Grilled to perfect then simmered in a flavorful light brown jerk sauce. Served with a Caribbean style rice and peas.

  Pork Calypso
Center cut pork loin seasoned with herbs and spices, grilled till gold and brown. Served in a veloute brown sauce with garlic roasted Rosemarie red potatoes.

Pork seasoned in a hot / mild jerk marinade. Grilled to perfect then simmered in a flavorful light brown jerk sauce. Served with a Caribbean style rice a and peas.


Breadfruit Tree Barbecue Ribs (St Vincent)
Ribs seasoned with Breadfruit Tree spices then smoked Boucan style. Served in a homemade plum barbecue sauce with black beans, and corn relish.

Smoked Cuban Style Suckling Pig (Cuba)
(whole, from 70 people and up) Price varies according to the pig weight.

"FEELING HOT Snapper with Rhum (Jamaica)
Red Snapper steak seasoned with Caribbean spices dredged in seasoned flour, grilled until gold and brown. Served with a rum meripoix and fresh vegetables.

Banana Leaves Halibut (Trinidad)
Marinated halibut fish steak smoked in a banana leaf with thyme, marjoram and lime.
Served with Basmati rice and fresh roasted vegetables.

Jerk Lobster
Delicious Braised rock Lobster in a mild jerk lemon butter sauce. Served with saffron Basmati rice and fresh vegetables.
  Ital Peleau (Barbados)
Mosaic Blend of vegetables, spices, rice and peas.

Mespo Pasta (St Vincent)
Noodles, grilled peppers, zucchini, onions, egg plant in a delectable saffron sauce
topped with crushed peanut.

Black Beans and Sweet Peppers Salad
Black beans, tri-color, diced bell sweet peppers, and fine chopped dates tossed in a lime and coriander vinaigrette with a hint of other spices.

Couscous with raisins and mixed nuts (Guadeloupe)
Prepared with toasted nuts, raisins and extra Virgin olive oil with spices.

Beef seasoned with herbs and dried spices then browned and smothered in a tasty brown sauce. Served over a bed of steamed Basmati rice.

Noodles and colorful vegetables (zucchini, yellow squash, sweet peppers , red onions), sauteed in a light butter sauce and drizzled with a mild Teryaki sauce.
